Help! I really need some meal ideas. I am super challenged when it comes to this stuff. I only really have like 3-4 meals I rotate through-- chicken and rice, fish, and spaghetti are my usual stand-bys. I am determined to expand the menu and improve my skills!

ALright Adaire i know that i no longer cook due to the live in chef... But when i would do spegetti i would make extra sause and do lasguna in a few days... then do a rost with potatoes one night and then french dip a few days later... Crock pot meals were always my favorite. Stew, bbq chicken, pork chops... I hope that this gives you a few ideas... I would also make a menu for a month and shop every 2 weeks for the stuff i needed...

Thanks for the link Elise. I am trying to end my streak as worst housewife ever. I was seriously not cut out for this job. Hardest job on the planet, and I totally suck at it!
If your family doesn't like food that's touching other food or mixed together, then none of my ideas will work for you!
At least once a week we have "Haystacks" (I've also heard them called "California Tacos")--layer Fritos on bottom, then rice, then chili, then cheese. Super easy. You can also put tomatoes, lettuce, sour cream, olives, etc. on top. My kids love it and we never get sick of it.
The sarival ward cook book has some great ones. Our fav's are Amie Wright's homemade Chicken Pot Pie and Heidi Larkin's Ham and Swiss Braid. If you need more info I'll e-mail you the recipe.
